Healthy Monday!: Bring everywhere salad

As I wrote in my last blog post, I’ve been so busy lately I feel like I barely have time to breathe! To make sure that I don’t forget to eat (a lot of people don’t understand that you ‘forget to eat’ but it’s more saying that you didn’t see the time go so it was too late to eat when you noticed!) I bring a packed salad with me in my bag. It’s quite easy to do and you can prepare it at the same time as your breakfast or the night before. By bringing a salad with you, first of all you assure that you can eat something healthy for lunch but you can also make it exactly the way you want it.

I love bringing my lunch with me as it guarantees that I like everything in it and also it saves you some money! Instead of qeuing up and wasting time at lunch, you can eat this on the go wherever you are and keep working on your stuff. I also like using tupperwares as portion size control as I know the amount of food that fills me up and doesn’t make me feel sick. When you go out to eat, it’s difficult to judge as the food is good, you don’t want to waste and you also want to enjoy it for once your eating out.

At lunch I like to pack something light and yummy. Here I just put some lettuce at the bottom, generally I also add some kale but I was out. Added some sweetcorn and red bell peppers. Bell peppers are a great source of vitamins A, C and E which helps keep your skin and hair healthy and helps keep your immune system up! I scrambled an egg to put on top as it brings some extra protein.

I put my dressing in a little jam jar so that it doesn’t spill out and I put it on right before eating my salad so that the lettuce doesn’t get soggy. I use these little jam jars for everything! For salad dressings, bringing beauty products with me up in the plane and so on. They are very practical and also fit quite a good portion!

This is a very light lunch, when I’m really busy I don’t like doing something too heavy as it makes me more tired but it still gives you some good nutrients to hold through the day. I snack on fruits as well so I keep my sugar levels up and keep energy and vitamins flowing in.
