Anyone started their countdown til Christmas yet? 41 days! I’m so excited!! I love Christmas. It’s the best time of the year, you wear warm jumpers, it’s fresh and cold outside, nice smells everywhere with pine trees and food to die for! Waiting impatiently for December 1st so I can start playing Christmas music all day long, I don’t think it’s appropriate just yet…
Until I can bake Christmas cookies, I baked cupcakes with three kids I babysit. I think it’s always fun to have a baking activity session from time to time and it’s so much fun! I split the recipe evenly so each kid had a bowl to work with to avoid any fight and then mixed it all together in a bigger bowl to make sure the recipe was even and added some flour as they managed to make it way too runny with their warm little hands over working the dough! They turned out pretty good though and they had so much fun. While they were in the oven, we played a few activities and let them cool down before decorating.
The decorating part is of course kids favorite part. They don’t understand the concept of moderation yet and decided to put everything on a single cupcake as you can see! A good way to set up the decoration table when you work with kids is to use the cupcake/muffin making tray, put paper tins and fill them with the little decorations so they can be grabbed easily and not dropped all over the kitchen floor! It’s a life saver you should definitely try it out if you haven’t before! It also sets all the options clear out, although that’s not needed as everything was used.
It’s a fun activity and if you’re not fond of decorations on your cupcakes you can easily scrap them off as the top is just icing sugar with water for the decoration to stick (;
Ingredients:
225 g of flour
225g of sugar
225g of softened butter
4 eggs
2.5 tsp baking powder
optional vanilla powder
Icing sugar and decorations
Recipe:
Mix the sugar and butter together until it’s light and fluffy, add the eggs one at a time. Mix the baking powder with the flour and add it in steps, while mixing every time. Set the oven to 180ºC and bake the cupcakes for 15-20 minutes. You can use a toothpick to check if any of the dough sticks on to know when they are ready!
Let the cupcakes cool before setting the icing on otherwise it will melt completely.
