Healthy Monday!: Eggs and ruccola sandwich



Hi everyone!

It’s lunch time and even if white bread isn’t as healthy it’s still pretty yummy! Nothing better than a nice homemade sandwich for lunch on a sunny day.

It’s quick and easy to just pop two slices of bread in the toaster while your eggs boil. Then just slice the eggs and the tomatoes on top of the bread. Add some ruccola, salt and pepper and close it with the other slice of bread.

Sounds easy right? Well it’s yummy too! Enjoy your lunch!
