Hi everyone!
I apologise, I didn’t post a Fashion Friday post this past Friday… I will try to post one this week, I just have limited space to take pictures of outfits at the moment…
For my healthy Monday post, I often eat granola in the morning. While I never know what goes into the ones I buy in store, I decided to make my own to try it out. I made my granola with apricots and raisins for dried fruits and walnuts and almonds (full and flaked ones).
You can choose whatever you want to add into your granola, whether being fruits, nuts or seeds, I just used 2 1/2 to 3 cups.
I used 1/4 cup coconut oil and 1/2 cup pure maple syrup. Melt the coconut oil, mix them both together and then add your 2 cups oats with the nuts and seeds. Mix it al well together, it will look like there’s not enough liquid at the start but more you mix more it will spread.
Lay a baking sheet in a baking form and spread your granola evenly in it. Bake for 15 min at 180ÂēC. Mix it so that it doesn’t turn into a big bar and add the dried fruits. Bake for another 10-15 min until the granola get a golden brown color.
Leave it to rest until it gets cold before you put it in a tin. It can hold for a week to two weeks.
Let me know if you try it out and what you put into yours!
Love, Jen xx
