Hope you all had a good start to your week. I love starting it with a healthy meal, gives you a boost for the rest of the week. And starting healthy makes you want to keep going, gives you strength and makes you want to commit to a healthy life style.
So I’ve decided to start with a salad once again, but I’m trying this new thing where I’m doing a one color meal – hence the color here being green. A green salad, with a base of any leaves and any green vegetables I had in my fridge. Here I used spinach as a base and steamed some broccoli and green beans, as well as cucumbers.
Green vegetables are said to be the best vegetables to eat, especially broccoli. It is very high in vitamin C and is a good source of vitamin A and K. It’s a very healthy and filling salad, filled with iron, magnesium and calcium. Other than that, I thought the taste of it was a bit boring as it all tastes very similar. Next time, I would add something to get more protein such as chicken or an eggs. Add olive oil and vinegar to make it perfect!
