Hi everyone!
Hope you all had a wonderful valentine’s day with the people you love, being your husband or wife, boyfriend or girlfriend, your crush, your best friend or family. Valentine’s day is just another commercial excuse to spend money and prove your love in public. I don’t personally believe in valentine’s day, I feel that proving your love should be everyday not just once a year. But for marketing reasons, it’s a great way to make profit!
I spent my valentine’s day with a group of friends, which made it lots of fun. For this occasion I baked chocolate cupcakes with chocolate frosting and added heart shaped marshmallows for decoration. I don’t eat chocolate myself but apparently they were really yummy 🙂
Recipe for 6 cupcake:
Ingredients for cupcakes:
57.5 g of sugar
57.5 g of butter
1 egg
1/2 tsp baking powder
42.5 g of flour
12.5 g of dark cocoa powder
Ingredients for frosting:
Butter
Powder sugar
Dark baking chocolate
Preparation:
Preheat oven on 200ºC.
Mix the butter and sugar together until it’s light and fluffy. Add the egg. Mix the baking powder, flour and cocoa powder together and add it slowly to the other mixture until you get a light batter. Separate evenly in cupcake forms and set in the oven for 15-20 min.
Let the cupcakes cool before adding the frosting so that it doesn’t melt and run on top.
I don’t have measurements for the frosting I made, I usually just do it as a feeling and look at the texture I want. I melt the chocolate in a bowl. In another bowl I mix butter and powder sugar and add the melted chocolate a bit at a time. I add sugar or chocolate depending on the texture wanted. If you want it more runny you can also add a bit of milk.
Let me know if you try out the recipe in the comments or by tagging me.
Love, Jen xx
